Dr. Michael U. Ukwuru
I am Dr. Michael U. Ukwuru from Igede in Benue State, Nigeria. I was born on December 30, 1962. I have M.Sc and Ph.D. in Food Microbiology from University of Nigeria, Nsukka, Nigeria and Michael Okpara University of Agriculture, Umudike, Nigeria. I currently work with the Federal Polytechnic, Idah, Kogi State, Nigeria in the Department of Food Science and Technology from 1994 to date where I am the Head of the Department. I have published many articles in reputable Journals and attended many local and International Conferences. I have also reviewed many manuscripts for both local and International Journals. My ongoing research work is to develop a starter culture for traditional spontaneously fermented foods in Nigeria with a view to improving their overall quality. I am a member of many professional bodies such as the Nigeria Society for Microbiology (NSM), Nigeria Institute for Food Science and Technology (NIFST), American Society for Microbiology (ASM), Society for Applied Microbiology (SfAM) and International Association for Food Protection (IAFP). I am married to a loving wife – Lucy with four (4) children – Sandra, Allen, Edmond and Jonathan.
